  1. In a large saucepan, poach over low heat, with a good stream of raw olive oil and a tablespoon of oil, the white part of the leek, clean and cut into slices.

  2. Then add the zucchini, peeled and cut into cubes.

  3. Stir and cook for 10 minutes on low heat.

  4. Then add the potatoes, peeled and cut into pieces, season and pour the whole with water or chicken broth.

  5. Let it cook on low heat for at least twenty minutes.

  6. When it is cooked, we remove it from the heat, go through a turmix or Thermomix, turn on the cream and a touch of nutmeg, stir, strain through Chinese and leave to cool.

  7. We serve zucchini cream, accompanied by some bread croutons.
