Vichy with figs and Iberian ham, a delicious summer recipe

  1. Cut the butter into cubes and add it, together with the olive oil, to a large saucepan or pressure cooker.

  2. In what is heated, cut the onion into large pieces.

  3. Pour into the pan, stir and fry for five minutes.

  4. We clean the leeks, removing the green part, wash and cut into pieces of a few centimeters.

  5. Add to the onion, stir and brown for a few minutes.

  6. Add potatoes, peeled and cut into large pieces.

  7. Cover with vegetable broth and cook over medium-low heat for 30 minutes.

  8. We test the salt spot and adjust if necessary.

  9. Add the cream and mix with a mixer or Thermomix until you get a very fine cream. Allow it to warm or cool if we are going to take it cold.

  10. At the time of serving, wash the figs and cut into quarters.

  11. Wrap each quarter with a slice of bacon and place on a skewer.

  12. Fry the skewers with the figs and Iberian bacon in a pan.

  13. In the same pan, stew the pie, which we will cut into thin strips.

  14. Divide the Vichy sauce into plates, place a few skewers and a few strips of toast on each of them.

  15. Sprinkle a little chopped Iberian ham on top and serve Vichy with figs and Iberian ham on the table.
