  • 2 tablespoons spicy gochujang paste
  • 1 piece of thumb-sized ginger, peeled and ground

  • 2 tablespoons rice wine
  • 2 cloves garlic, peeled and ground
  • ½ teaspoon black pepper
  • 1 grated sweet apple (no need to peel)
  • 1 tablespoon sesame oil (toasted)
  • 2 tablespoons vegetable oil
  • 3 tablespoons cold water
  • 200 g chopped mushrooms

For the pizza dough:

  • 360 g of universal flour
  • 7 g quick yeast (dry)
  • 1 teaspoon powdered sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 220 ml of warm water
  • 2 tablespoons semolina (optional, but gives a crispy touch to a good dough)
  • Flour for the work surface

Too much

  • 1 tablespoon cornmeal mixed with two tablespoons of cold water (to make a paste)
  • 200 g grated mozzarella
  • 4 small eggs
  • 2 hot peppers (we use Fresno peppers: 1 red and 1 green)

Instructions

  1. To start with the recipe, put all the ingredients of the bulgogi sauce, except the mushrooms, in a bowl and mix them.

  2. Then add the mushrooms, cover the bowl and let it marinate at room temperature for 30 minutes.

  3. Then prepare the pizza and for this put the flour, yeast, sugar, salt and oil in a large bowl and mix everything.

  4. Add three-quarters of water and stir with your hands to form a dough. If necessary, add a little more water. The texture should be a little sticky.

  5. Place the dough on a floured surface and knead for 7-8 minutes until you get a smooth dough.

  6. Then place it in a large bowl greased with oil and place it in furnace , in the fermentation program, for 30 minutes until doubled in size.

  7. Meanwhile, remove the mushrooms from the bowl with a grater to drain the liquid and place them in another bowl.

  8. Pour the bulgogi sauce into the pan and bring to a boil. Once it boils, reduce the heat to a simmer and add the whole cornmeal paste, stirring constantly, until the sauce is thick enough to cover the back of the spoon.

  9. Turn off the heat and allow to cool slightly.

  10. When the oven dough has doubled, remove it and change the function to CircoTherm® Intense at 220 ° C if using a baking tray, or at 275 ° C if using a pizza stone.

  11. Place the dough on a surface with flour and tap it with your hands to remove air.

  12. Then divide the dough into two equal parts, sprinkle with semolina and stretch the dough to form two circles about 15 cm long.

  13. Then place the pizzas on the pizza shovel, if using a baking stone, or on the oven tray.

  14. Then spread the bulgogi sauce, leaving a 1.5 cm border around the pizza and cover with mozzarella.

  15. Place the mushrooms on top of the mozzarella, leaving two holes in each egg pizza. Add the peppers and spread a little olive oil on the edges of the pizza. We also sprinkle each pizza with a few drops of butter.

  16. If using oven trays, place the pizzas and bake for 5 minutes.

  17. Then carefully add the eggs to the holes. If it’s easier for you, you can first break the egg in a glass.

  18. Bake for another 5-7 minutes until the pizza is crispy and the egg whites are cooked through.

  19. If you use a pizza stone, add the eggs directly and bake for 6-7 minutes.
