Ingredients (2 people)
- 100 g. Boiled shrimp tails from Aginamar
- 1 tomato
- 1 medium onion
- 4 marinated gherkins (small)
- 1 bunch fresh coriander
- 1 bunch fresh parsley
- ginger (to taste)
- 1 avocado
- 1 lemon in juice
- 2 tablespoons Dijon mustard
- ground black pepper
- extra virgin olive oil
Preparation of Timbale’s recipe from avocado and shrimp:
Book some prepared Aguinamar shrimp tails to decorate the timbale and cut the rest.
Cut the avocado into cubes and finely chop the pickles, peeled tomato and onion. Chop the parsley and coriander.
To make the dressing Mix a little oil with grated ginger to taste, lemon juice and Dijon mustard. Salt and pepper to taste and emulsifies to integrate all flavors well.
When all the ingredients are ready, go assemble the eardrums. To make it easier, mix all the ingredients in a bowl, except the shrimp tails reserved for decoration.
Mix together the avocado, chopped shrimp tails, tomato, onion, pickles, parsley and coriander. Mix well and also add the ginger and mustard dressing. Stir again to distribute the dressing.
To prepare the tympani and shape it you can take advantage of a round pasta knife. Include the mixture in the round shape and remove it when it is well integrated.
Decorate the timbale with the preserved shrimp tails, add a little more dressing on top and just add a touch of lemon zest. And done!
