The recipe for Bruno Oteiza’s cake for the Day of the Three Kings with walnuts, blueberries and raisins. Perfect dessert to prepare for Christmas.

Ingredients (6-8 people):

  • 300 g Butter
  • 300 g Flour
  • 300 g powdered sugar
  • 4 egg yolks
  • 4 proteins
  • 100 g of dried blueberries
  • 100 g Peeled walnuts
  • 50 g of raisins
  • 1 gr ras el hanout (Moroccan spice mixture)

Preparing the recipe for the bishop’s biscuit:

Place the butter until creamy in a bowl and mix with the mixer until it emulsifies. Add a little of the powdered sugar little by little while continuing to beat and add the yolks. Continue beating until you get a fluffy cream and add the flour.

Beat the egg whites on hard snow and mix with more powdered sugar. Add the previous dough little by little and continue to assemble. Add ras el hanout, blueberries, raisins and walnuts and add all the remaining powdered sugar. Mix well with your tongue, using gentle wrapping movements.

Sprinkle mold with flour and remove excess. Fill it with the dough and bake (pre-hot) at 165 ° C for 35 minutes.

Cut the cake into slices and serve.
