This apple cake is crazy. It is very easy and quick to prepare and is so juicy that it will fly away. This is an ideal way to take advantage of ripe apples. Ingredients

For 8 people

  • 2 large apples (250 g peeled apple)
  • 250 g common wheat flour (2 cups)
  • 150 g sugar (2/3 cup
  • 160 ml milk (2/3 cup)
  • 2 eggs and 2 egg whites
  • 1 lemon (peel and juice)
  • 8 g baking powder or baking powder (1 teaspoon)
  • For the cream:
  • 2 egg yolks
  • 250 ml milk (1 cup)
  • 60 g sugar (1/4 cup)
  • 30 g cornstarch (1 tbsp)

1.- Prepare the confectionery cream. Pour the cold milk into a saucepan and add the cornstarch and stir well to dissolve the cornstarch. Add the sugar and two egg yolks. Beat well and take the pot on the fire. Heat over medium heat, stirring, until cream thickens. Pour the cream on a well-spread plate so that it cools down in advance. Leave it covered with kitchen foil in contact with the cream so that it does not dry out.

2.- Preheat the oven to 180 degrees with heating up and down and without a fan.

3.- Prepare the form. I used a mold with a diameter of 25 centimeters at a height of 6. Cover the form with wet parchment paper so that it fits perfectly.

4. – Peel the apples. Remove the core and cut them into slices and each slice in half.

5.- Prepare the cake. Put the two eggs in a bowl, add the egg whites that you saved for making the custard. Add a pinch of salt, sugar, lemon zest and juice. Beat with a wire mixer or hand mixer. Add the milk and stir again. Now include the flour together with the baking powder or baking powder through a sieve. Continue beating until all ingredients are integrated. Add the apple and stir with a spatula.

6.- Pour the cake into the form. Smooth the entire surface well with a spatula.

7.- Put the pastry cream in a pastry bag.

8.- Decorate the cake in a spiral shape with confectionery cream. (Watch the video how I do it).

9.- Bake the cake. Place it on the second of the five levels of the oven and bake for 45 minutes at 180 degrees, heating up and down and without air.

10. – Disassemble the cake.

11.- You can decorate it with a little icing sugar on top.
