Carlos Arginiano offers to prepare delicious noodles with beef and cheese dumplings, bathed in homemade sauce made with garlic and onions, bacon, white wine, tomato sauce and spices. Delicious plate with fresh pasta with meat, very easy to prepare!
Ingredients (4 people):
- 400 g noodles with fresh pasta
- 75 g fresh bacon
- 250 g ground beef
- 1 spring onion
- 3 cloves garlic
- 400 ml tomato sauce
- 30 g sheep cheese with txakoli
- 15 breadcrumbs
- 1 bouquet of garnishes (bay leaf, oregano, rosemary, thyme, parsley)
- 125 ml of white wine
- extra virgin olive oil
Preparation of the recipe for tagliatelle with beef meatballs and cheese
Peel and mince 2 cloves of garlic into small cubes and put them to stew in a saucepan with a trickle of butter. Chop the onion in the same way and turn it on. Saute vegetables for 3-4 minutes on low heat. Short bacon into strips and add them. Stew everything well for another 4-5 minutes.
Pour the wine and let it cut a little. Add the bouquet is beautiful (aromatic herbs “tied”) and tomato sauce. Season with salt and cook for 20-30 minutes. Remove the bundle of aromatic herbs and save the sauce.
Finely chop the other clove of garlic, put it in a bowl and add the minced meat. Grate the cheese top the mixture and add the breadcrumbs and a little chopped parsley. Mix well.
Form the meat and fry them in a pan with oil and add them to the sauce.
Put a lot of water to heat in a saucepan. Season and when it starts to boil, enter fresh pasta and cook it for the time indicated on the package.
Drain the paste, place it in 4 plates and spread the meatballs and sauce on top. Garnish the plates with a little parsley leaves.
When cooking the pasta, do not add oil. If oil is added to the cooking water, the sauce will run out and will not integrate with the noodles.
