Squid filled with ink
Today in Family Kitchen with Javier Romero I present one of those recipes that are time consuming but extremely useful, even if eaten very quickly. It’s about squid stuffed with ink, which is one of the historical recipes in my family and I want to share with all of you. At home, we always say that this recipe is one of the most annoying to eat, because they end very quickly for what it costs to make them. It’s obviously an exaggeration, because once you start filling them in, they don’t cost that much to prepare. In any case, these squid, filled with ink, are a delicious dish that everyone will like at home. Of course, as I already mentioned, I do not recommend preparing them for lunch or dinner with many people. Instead of a daily meal, I recommend these stuffed squid with 100% ink.

Ingredients for 4 people
We will start by finely chopping the garlic and onion and place them to fry in a pan or flat casserole with olive oil covering the bottom and a pinch of salt. When we have peeled and sliced carrots, we will also add it. When the onion is transparent, we will add squid ink.
Then we will pour the white wine and stir to mix it with the ink. Then add the fried tomatoes and stir again. We will cook slowly while we clean and fill the squid.
We need to clean the squid (if they haven’t already done so at the fish farm) and cut the legs into pieces. Then we will break an egg and put some breadcrumbs on it. Then we will put the legs on the squid and mix everything.
Now we will fill the squid to a little more than half, because then the stuffing will swell due to the egg and bread and if we fill too much, they can burst.
Then we will take a toothpick and nail it to both ends of the squid, as seen in the photo.
Before we put the stuffed squid in the sauce, we will add a little water and stir it. Then we will put all the squid and cook them on medium heat for 20-25 minutes.
