  • Garlic 1 unit
  • Laurel 2 units
  • Thyme qs.
  • Rosemary cs.
  • Oxal 500 gr.
  • Carrots 4 units
  • Salt 30 gr.
  • Leek 2 units
  • For beef tail stew
  • Dijon mustard 15 g.
  • Micro meclum
  • Basil sprouts
  • Coriander sprouts
  • Mint sprouts
  • For accompaniment
  • Garlic 5 g.
  • Ginger 20 g.
  • Shallots 100 gr.
  • Red wine 2l.
  • Port wine 500 gr.

  • For the lock lock
  • Water 300 gr.
  • Hondashi 20 gr.

  • For the dressing
  • Coriander 50 g.

  • For the Mexican tortilla

Preparation

For beef tail stew

  1. We forge and mark the bull’s tail in a Parisian restaurant.
  2. Stew the garlic and all the vegetables in the same oil.
  3. Put everything in a pressure cooker for 1 hour and 20 minutes.
  4. We sneak.
  5. Bone and cut the tail

For the dressing

  1. Once the sauce is strained and degreased, reduce it with hot peppers until thick.
  2. On the other hand, chop the dill and mix with the tail and soy.
  3. Finally add the reduced sauce and mix well.

For the Mexican pancake

  1. Mix the ingredients, knead and roll with a rolling pin.
  2. Cut with pasta cutters and grill.

For the lock lock

  1. Chop the onion, garlic and ginger into brunoise.
  2. Make a sauce without turning brown and then add all the previous ingredients and leave it to reduce, emulsify, strain and leave to cool

Presentation

  1. On top of the Mexican pancake put the stewed beef tail, lock sauce, sprouts and finish with the fried onions.
