Slices of fillet and whey from chives
Exclusive recipe by JuanLu Fernández (Restaurant Lú cocina y alma) from beef.
- For the serum
- 240g small onions
- 200g sunflower oil
- 80 g of lime juice
- 90g of rice vinegar
- 3 tablespoons soy
- For the mayonnaise
- 2 egg yolks
- 1 whole egg
- 40 g of paio cheese
- Oil: sufficient for installation
For the serum
- Mix all ingredients, strain and save.
For the mayonnaise
- Combine in a blender and place in a sauce bowl
- Once the buttermilk and mayonnaise are ready, place the ingredients on a plate and garnish with the fillet slices.
- If you want, you can also add thin slices of black truffle on the meat.
