  • For the serum
  • 240g small onions
  • 200g sunflower oil
  • 80 g of lime juice
  • 90g of rice vinegar
  • 3 tablespoons soy
  • Sol
  • For the mayonnaise
  • 2 egg yolks
  • 1 whole egg
  • 40 g of paio cheese
  • Oil: sufficient for installation


For the serum

  1. Mix all ingredients, strain and save.

For the mayonnaise

  1. Combine in a blender and place in a sauce bowl
  2. Once the buttermilk and mayonnaise are ready, place the ingredients on a plate and garnish with the fillet slices.
  3. If you want, you can also add thin slices of black truffle on the meat.
