Everyone knows that a traditional dish of Galician cuisine And I wanted to give it another twist, combining it with a typical Salamanca potato recipe: the potatoes that are dried. Instead of just cooking the octopus, I passed it through the grill to give it a more intense flavor.

1 – We scare the octopus

We will start by cooking the octopus in a pressure cooker, with plenty of water, bay leaves, black pepper and salt. Before we put the octopus and put the lid on, we will wait for the water to boil. When the water boils, we will place and remove the octopus from the water up to 3 times. This is what is called “scaring” the octopus.

After this step we will leave the octopus in the water, put the lid on with the valve closed and cook the octopus under pressure for 10 minutes.

3 – We prepare the sauce for the potatoes

While the octopus is being made, we will be making the revolcon potatoes. For this purpose, we will put the pot on the fire with olive oil, covering the bottom with garlic and onion, finely chopped, and a little salt.

4 – Add the potatoes

When the garlic and onion start to turn brown, we will add half a teaspoon of hot red pepper. Stew it for about 10 seconds and add the potatoes, cut into tiles. We will mix them so that they are impregnated with oil and red pepper. We add enough salt and water to cover the potatoes, but to show them, it’s not like in a stew.

5 – We mash the potatoes

We will wait until they are completely cooked before mashing them. We will mash them with a fork or something that does not crush them excessively, because the potatoes in rags are not mashed. It’s nice to find a hard piece of potato.

Once we get the mashed potatoes, we will stew it a little more so that any excess water evaporates.

7 – We finish cooking the octopus

At some point in the process of cooking the potatoes that are collapsing, we will remove the pot from the heat, release it from pressure and remove the octopus.

8 – Smooth the legs of the octopus

We will cut off the octopus’ legs and pass them through a grid with a little olive oil and a pinch of salt on each of them. Little by little you will see the octopus darken. When you do it on both sides, we will remove the legs from the iron.
