Ingredients (4 people):

  • For the mayonnaise:
  • 1 egg
  • 1 clove garlic
  • some fresh coriander leaves
  • soft olive oil

  • 1 teaspoon paprika

Preparation of the recipe for baked mushrooms on a flat couscous:

For pipe, chop the garlic cloves and fry them in a saucepan with a drizzle of butter. Chop the onion, add it and let it fry. Chop the green and red peppers and add them to the casserole. Stir fry. Add a few bunches of saffron, red pepper and grated tomato. Season and cook for 2-3 minutes. Remove some of the pepper sauce to a plate and cover the vegetables in the casserole with water. Cover and boil for 10-15 minutes. Save the sauce.

Distribute cous cous on a large plate and pour the sauce on top (same amount of sauce as couscous and a little more). Mix well and cover with clear plastic wrap. Let it stand for 5-10 minutes so that it absorbs all the liquid well. Remove the plastic.

Clean the mushrooms and place them on an oven-safe tray. Add salt and pepper, sprinkle with a drizzle of butter and bake in oven at 180 ° C for 15 minutes. Place them on the couscous after it has settled.

For mayonnaisePut the egg, garlic clove, a little chopped coriander leaves, red pepper and a good stream of soft olive oil in a beating cup. Season, place the mixer on the bottom and start beating without moving. When it starts to emulsify, move the mixer arm up and down until you get a smooth sauce.

Sprinkle the plate with mushrooms and couscous with chopped parsley and accompany with mayonnaise and pepper. Serve.
