Roast pork rib with chimichuri sauce
For today’s recipe I have prepared a roasted pork rib with chimichuri sauce, the marinade, which has various spices, garlic, oil and vinegar. E very easy and cheap recipe for home cooking with which you will look good on normal days and holidays.
Most of the dishes I present are from Spanish gastronomy, I made you one of the Argentine gastronomies and today I have the pleasure to combine them to further enrich our recipe book.
Chimichurri is an Argentine “adobo” that has a very curious origin. In the middle of the 19th century, an English merchant named Jimmy Curry came to the country, who was interested in importing meat into the United Kingdom, so he came to Argentina to see livestock farms.
To entertain him, they took him to a ranch near Canuelas and prepared a Creole barbecue for him. The Englishman was amazed by what he saw on the grills and spit, but mainly by the aroma that flooded the place. The man consulted what this meat was accompanied by, they told him that with nothing and that it was just salted. Then Mr. Curry and as a way to thank the food that was prepared in his honor, asked for some ingredients (hot peppers, peppers, tomatoes, onions and garlic), some spices (such as oregano, rosemary and thyme) and some spices ai minced, salt and pepper) and in boiled water base he prepares a dressing or marinade to flavor and perfume this exquisite roast meat. He actually prepared what we know today as Chimichuri. Those present liked it and began to prepare it and accompany the roasted meats from that moment on. And although the peonad remembered how this real delicacy was made, the name and surname of the “gringo” were not very clear to them. Then, through a deformity, Jimmy Curry went to Chimichuri, which “sounded” similar.
And this is the story of this marinade, which became popular and spread throughout the country, although in each region it is presented with different ingredients, although always retaining this original basis, which was born from the British and culinary taste of Don Curry.
Ingredients for 4 people
We started making chimichuri sauce, for which I will leave you the recipe I have already posted related HERE.
Then we will put salt on the bottom of the baking tray and place the pieces of ribs on top, with the visible part of the bones facing up. Turn the oven to 180 degrees with heating up and down and when it’s hot, put the rib for 50 minutes to start.
After this first baking period, remove the pan from the oven, place a few tablespoons of sauce on top of the ribs and turn it over. Later we add a little salt and a good spoonful of chimichuri sauce. Put the ribs back in the oven and bake for another 50 minutes.
After the second 50 minutes, take the ribs out of the oven again and use a brush to spread the juice on top of the pan. Raise the oven temperature to 200 degrees and place the ribs for another 15 minutes.
After the last 15 minutes, we can finally remove the ribs with a barbecue with chimichuri and sit at the table to eat. And that’s it, friends, we’ve finished our homemade recipe for the day.
