  • 1 tablespoon sunflower oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon salt
  • ½ teaspoon cayenne powder or similar
  • ½ teaspoon of turmeric powder
  • 5 medium potatoes, peeled, quartered and boiled
  • 40 g chopped fresh coriander leaves

Instructions

  1. We will start this recipe by making a few cuts on both sides of the lamb.

  2. Then mix the yogurt with all the ingredients to marinate and mix well.

  3. Then cover the baking dish with silver foil and introduce the leg of lamb.

  4. Then spread the whole marinade mixture over the meat, making sure it is well covered, and put it in the fridge for a few hours or even, if possible, overnight.

  5. When we go to cook the lamb, we have to take it out of the fridge an hour before and leave it at room temperature.

  6. Preheat the oven to 180 ° C in CircoTherm® mode and roast the lamb for about 1 hour and 45 minutes on level 2 so that the meat is slightly pink in the center. You may need to cover it with silver foil for the last 10-15 minutes so that it does not burn.

  7. Finally, after this time, let it rest covered for about 20-25 minutes before cutting it.

  8. To prepare the potatoes, heat oil in a pan and add the mustard seeds.

  9. When they start to crack, add the spices and 2 tablespoons of water.

  10. Then add the chopped potatoes and mix well.

  11. Finally add the coriander and stir again. Serve the lamb, accompanied by potatoes.
