We remove all other feathers or down that have chicken skin.
Wash, drain and season.
Place the chicken (with the breast on the base) in a bowl or clay pot, pour half a glass of water into the base and place in the oven preheated to 180º.
After 40 minutes, remove the pan from the oven and turn the chicken.
Put the peeled garlic in the mortar, a pinch of coarse salt and a little parsley.
We pass everything well. Add the vinegar and the remaining water. We stir.
Take out the chicken, turn it over and pour the previous detergent over it.
Put the chicken back in the oven and let it cook for another forty minutes at 180º.
We can accompany the roasted chicken with salad and some stuffed mushrooms, for example.
If you choose these stuffed mushrooms, you will only need two or three mushrooms per person.
Wash and dry the mushrooms. Remove and cut the foot or trunk.
Stew this minced meat in a pan with two tablespoons of olive oil.
Distribute on mushrooms, salt and pepper.
Cover with a little vegetable puree and finish by adding a piece of aged cheese.
Place in the oven 15 minutes before the roast chicken is finished.
Remove the roasted chicken and mushrooms.
