Ingredients (4 people):
- 300 g Shiny Sabroz rice
- 750 ml of fish broth
- 200 g Smoked salmon
- 150 ml cooking cream
- 1/2 onion
- 2 teaspoons capers
- olive oil
Preparation of the recipe for rice with salmon:
In the casserole, heat a little oil and add the shiny Sabroz rice. Stew for 2 or 3 minutes and cover with hot fish broth. Leave to cook for about 18 minutes and keep until we prepare the remaining ingredients.
Cut the onion into small cubes and the smoked salmon into strips. Heat about 3 tablespoons of oil in a pan and add the onion along with the saffron. Stew over medium heat until onions are soft.
When the onion starts to become translucent, add the salmon to the pan. Cook it lightly until it starts to change color. At this time, add the capers and cook for another 3 or 4 minutes.
Pour the cream into the pan and reduce the heat to medium. Allow it to cook, stirring occasionally, for about 5 minutes.
After this time, add the rice and stir so that all the flavors integrate. At this point, adjust the salt and let it cook for another 2-3 minutes.
