Rice and cereals
Recipe for rice with mussels and vegetables, prepared by Karlos Arguiñano, a complete, rich and well-founded dish.
Ingredients (4 pcs.):
- 300 g SOS bomb rice
- 24 mussels
- 1 spring onion
- 4 cloves garlic
- 10 mushrooms
- 1 zucchini
- 1 lemon
- 100 ml only
- 1 liter of broth per paella
- extra virgin olive oil
Preparation of the recipe for rice with mussels and vegetables
Peel and chop 2 cloves of garlic and grate them in a saucepan with a trickle of oil. Clean the mushrooms by removing the bottom. Cut them into 4 and add them. Season and sprinkle with a little chopped parsley. Pour half txakoli and cook for 5-6 minutes.
Peel and finely chop the remaining 2 cloves of garlic and stew them in a pan. Add the mussels and the other half of the txakoli. Sprinkle them with chopped parsley, put the lid on and wait for them to open.
Peel and finely chop the onion. Cut the zucchini into quarters on the moon. Stew the vegetables in the paella with a trickle of oil. Add the rice and stew it a little, pour the broth and cook for 15 minutes.
Add the mushrooms with their sauce and mix well. Place the mussels with its juice on top and cook everything together for 2-3 minutes to mix the flavors.
Decorate with lemon, serve and garnish with a little parsley leaves.
