  1. Cut the vanilla bean in half and place it in a large pan along with the milk and lemon zest, from which we will remove all the remaining “white” part.

  2. Put the milk to heat over medium heat.

  3. As soon as it starts to boil, add the rice.

  4. Stir gently and when it starts to boil again, reduce the heat and simmer for forty minutes, stirring occasionally to prevent the rice from sticking.

  5. Add sugar and butter, stir until perfectly integrated into the milk. We tried the point of rice, it should be “al dente”, because once it is removed, a little more will be done.

  6. Remove the rice pudding from the heat, remove the lemon zest and serve in bowls or clay pots, plates, cups or crystal cups.

  7. When serving rice pudding, we can sprinkle a little sugar on top and caramelize with a kitchen torch, being careful to put the rice pudding in a clay pot, as the cup is not very well understood.
