Carlos Arginiano prepares a classic recipe: White beans with peppers and chorizo, a delight for the palate and a fight against the cold!
Ingredients (4 people):
- 300 g white beans
- 100 g of fresh chorizo
- 2 through
- 3 cloves garlic
- 1 spring onion
- 1 carrot
- 2 green peppers
- 1 red pepper
- extra virgin olive oil
Preparation of the recipe White beans with peppers and chorizo:
Put the beans to soak the day before. Prepare the chorizo in a saucepan over low heat for about Approximately 30 minutes. Book it.
Peel and dice the garlic, onion and carrot and fry in a pan with a drizzle of butter. Remove the lower part (hair) and the upper part of the leek (the greenest), make a cross section in the upper part, rinse them well and cut them. Add them to the pan, season and stew everything well. Transfer everything to a blender glass, pour a glass of water and mix them with an electric mixer. Reserve the grated vegetables.
Peel the red pepper, cut it into cubes about 2-3 cm and put them to stew in a saucepan with a trickle of oil. Remove the stems and seeds from the green peppers and cut them into slightly smaller cubes. Add them to the casserole. Give them up a little.
Add the drained beans and vegetable puree. Cover the beans with water, season and cook for 50-60 minutes.
Divide the beans between 4 plates. Cut the chorizo into 12 thin slices and place 3 on each plate.
Not all white beans take the same amount of time to be ready for consumption. To look good, it is best to check the point during cooking.

Today’s dish respects the recommended portions of beans (75g per person), representing 23.8% of the plate, and vegetables (215g per person), representing 68.2% of the plate.
However there is a small amount of meat, represented only by chorizo and which represents only 7.9% of the dish.
A portion of meat, fish or egg is recommended for dinner to compensate for the deficiency in food.
