Yesterday we went shopping, after a long weekend, in the supermarket (Eroski Center), which we have near home.

As soon as we entered a stand full of tropical pineapples with a sign indicating that the second unit cost us half as much as the first, and since the price of the two pieces did not reach 3 euros, we put two pineapples in the shopping cart.

We went through the fridge and saw some very fresh chickens, took one and when we stored it in our purchase next to the pineapples, our mouths watered, thinking of a good recipe to combine these good (and cheap) foods.

Instructions

  1. In a bowl, macerate with the matured rum, dates, prunes and tropical pineapple, cut into pieces. Cover with plastic wrap and refrigerate for 1 hour.

  2. We take the chicken and clean it of fat and down (if any), season it and season it with a mixture of raw olive oil, rosemary and oregano.

  3. Fill it with the mixture that we had stored in the refrigerator and place it on a baking tray with a little water. Sprinkle the maceration broth on it, which remains in the bowl.

  4. Put the pan in the middle of the oven, preheated to 180º, for one hour, turning half of the roast. When you see that the dish has a “rich” sauce, take a spoon and occasionally pour the chicken with it.

  5. Remove and serve a piece of roasted chicken with some of the stuffing and sauce with the juice from the roast.

  6. In the end, we only had the chicken breasts and a whole pineapple, but that would be another story … or a recipe.
