- 350 ml of water
- 500 g of strong flour

Preparing the recipe for pretzels or salted onions:
Spread the yeast in a bowl with 100 ml of water. Stir for 5 minutes to dissolve. Mix the flour and salt in a large bowl. Make a hole in the center and pour the water with yeast.
Using a wooden spoon, scoop the flour from the side of the bowl and mix with the water from the yeast to form a soft paste. Cover with a tea towel and leave to simmer for about 20 minuteswhile fermenting and forming foam.
Mix with the flour. Stir in the remaining water, if necessary, until a firm, sticky dough forms.

Paint the bows with egg glazeJust beat the yolk with a tablespoon of water and a pinch of salt and sprinkle with the finish of your choice: sesame seeds, poppy seeds or coarse salt.
