Mushroom cake recipe with toast from Karlos Arguiñano, cheap and very easy to prepare dish.

Ingredients (4-6 people):

  • 600 g Mushrooms
  • 6 shallots
  • 12 fresh garlic
  • 200 g of bread

  • 25 g butter

  • 200 g. Liquid cream
  • Water
  • extra virgin olive oil

Preparing the recipe for mushroom cake:

Chop shallots and fresh garlic and put them to poach in a saucepan with a little oil. Season. Clean and cut mushrooms and add them. Stew them for about 10 minutes.

Take 3 tablespoons of the mixture (save the rest) and place them in a saucepan. Add a splash of white wine and bring to a boil to allow the alcohol to evaporate. Add a little water and let simmer for 10 minutes. Crush, strain and combine sauce with a little refined corn flour diluted in water. Sprinkle with chopped parsley and set aside.

Cut bread in thin slices, spread on the oven plate and toast. Reservation.

Helmet eggs in a bowl and beat them with a pinch of salt. Add liquid cream and the remaining mixture of mushrooms, garlic and shallots. Mixture. Spread mold with a little oil. Put a strip of parchment paper, grease with more oil and flour the form. Pour the mixture and cook the cake in oven to the water bath to
180º C for 40 minutes (with preheated oven). Allow it to harden before removing it from the mold.

Serve the cake with mushrooms, accompany it with sauce and toast. Garnish with parsley leaf.


If you do not have shallots, you can make the recipe with onions or garlic.
