Recipe for melon and strawberries from Gazpacho – Eva Arginiano

Eva Arginiano prepares a plate with melon and strawberries with fried bun cubes, an easy and refreshing recipe.

Ingredients (2 people):

  • 1/4 melon
  • 12 berries
  • 1 bun of milk bread
  • 1 var
  • extra virgin olive oil
  • mint for decoration

Preparation of the recipe for melon and strawberries from gazpacho:

Remove the crust from the bun and and cut the crumb of dice. Fry in a pan with olive oil until lightly browned. Drain on absorbent paper and save.

Mash the melon together with the strawberries (save one last) and the bark of a bun bread.

Serve the gazpacho in several cups, add the fried bun cubes, sprinkle with grated lime peel and decorate the cup with half a strawberry and mint leaves.
