Fish and mussels
Carlos Arguiñano prepares the delicious recipe for Perlon meatballs in the TV program 55000 Recipes: a very complete dish combining fish and vegetables.
Ingredients (4 people):
- 4 pearls (750 g without thorns)
- 25 g of a little bread
- 100 ml of milk
- 1 egg (small)
- 16 fresh garlic
- 2 onions
- 2 carrots
- 2 cloves garlic
- 50 ml of wine
- 700 ml of vegetable or fish broth
- flour (for coating)
- extra virgin olive oil
Preparing the recipe for Perlon meatballs:
Put it on crumbs of bread in a bowl and cover it with milk. Leave to stand until soak well.
Remove the bottom and top of fresh garlic, chop and stew in a pan small with oil spray. Book them.
Clean up fish, remove the head and thorns and remove the groin. Peel off their skin, chop the meat into small cubes and place in a bowl. Add egg, drained bread crumbs and garlic. Salt and pepper, add a little chopped parsley and mix everything well. Form the balls and pass them through flour. Fry them (briefly) in the pan with hot oil and drain on a plate with absorbent paper.
Peel and cut into cubes garlic, onions and carrots. Put everything saute in a casserole by spraying oil. Season. When they start to brown, pour the wine and let it boil strongly. Pour the broth and let it decrease for about 15 minutes. Pass the sauce through it stirrer and place it in a lunch box. Add the meatballs and cook for 2-3 minutes.
Serve with sauce. Garnish each plate with a few parsley leaves.
To make the meatballs more juicy, it is interesting to add some bread crumbs soaked in milk.

In today’s dish there are almost no foods that provide energy in the form of slowly assimilated carbohydrates, but only 25 g of bread used to make meatballs.
In addition, the amount of vegetables and greens it is scarce (150 g per person), less than 50% of the plate: 42.7%.
This makes perlon and the egg, even if within a healthy portion, exceeds the recommended 25%: 55.5%
