In the 55000 Recipes program, chef Carlos Arguiñano prepares the recipe for Turkey Pickles to prepare and enjoy!
Ingredients (8 people):
- ½ turkey
- 3 through
- 6 carrots
- 12 shallots
- 12 green asparagus
- 12 radishes
- 2 heads of garlic
- 3 liters of extra virgin olive oil
- 1 liter of vinegar
- 2 bay leaves
- 2 sprigs of rosemary
- 2 sprigs of thyme
- 20 grains of black pepper
Preparation of the recipe for marinated turkey:
Pour oil and vinegar in large casserole. Cut turkey separating the breast, wing and thigh and add them to the casserole. Add the garlic (with the skin) and pepper to the casserole. Add bay leaves, sprigs of thyme and sprigs of rosemary. Season. Cook the turkey on low heat for 2.5 to 3 hours.. Take out a few cloves of garlic and set them aside.
Peel carrots. Remove the lower part (hair) and the upper part (green) of through, wash them well and cut them into slices. Cut radish leaves. Cut the bottom of asparagus. Peel shallots. Put all the vegetables in a saucepan and cover part of the turkey marinade (liquid). Boil them for 20 minutes. Remove vegetables to the plateau and add the pre-preserved garlic cloves.
During serving, remove the skin from pieces of turkey and cut the breast into fillets. Put everything in one source.
Strain pickle pickle and salsea on the one hand vegetables and meat on the other. Garnish with a little parsley leaves.
