Bruno Oteiza’s recipe for cooking homemade teriyaki sauce, an adaptation of the traditional Japanese recipe, ideal for accompanying meat, fish and vegetables.
- 250 ml maple syrup (honey can be replaced)
- 250 ml of water
- 125 ml of lemon juice
- 125 ml soy sauce
- 1 piece of fresh ginger
Preparation of the recipe for homemade teriyaki sauce:
Put maple syrup, soy sauce, lemon juice and a glass of water in a saucepan. Peel the ginger with a teaspoon and add a piece to the casserole. Add a little pepper. Mix everything well and put the pot on the fire.
Let the sauce simmer for a few minutes until reduced.
Remove the pieces of ginger and serve with teriyaki sauce.
If you can’t find maple syrup, you can replace it with the same amount of honey.
Teriyaki sauce is ideal for accompanying fish or meat dishes, such as salmon or pork skewers. It is also a good accompaniment to vegetables or noodle wok.
