Recipe for fried biscuits – Eva Arginiano

Eva Arginiano’s fried sponge cake dessert, accompanied by orange marmalade and grated coconut, a different way to make sponge cake.

Ingredients (6 people):

  • 1 natural yogurt
  • 2 eggs
  • 200g sugar
  • 200 g flour
  • May 5
  • 1 pinch of salt
  • 3-4 pieces of lemon peel
  • 100 g of orange jam
  • 4 tablespoons grated coconut
  • extra virgin olive oil
  • powdered sugar
  • mint leaves

Preparation of the recipe for fried sponge cake:

Put the eggs in a bowl. Add sugar and yogurt and mix well.

Mix the flour with the yeast and sift. Add to the bowl and season. Stir vigorously until you get a homogeneous dough. Let it stand for 15 minutes.

Heat a lot of oil in a pan. Add the lemon zest and fry a little. Take them out on a plate. Add small portions of dough and fry them on both sidess in the same oil.

Place on each plate a little jam and a little grated coconut. Add 3 cupcakes and sprinkle with powdered sugar. Garnish with a little mint leaves.


To make the sweets ready while you fry them, it is important to pour hot oil on top, as if you were making a fried egg.
