Recipe for fresh mushroom noodles – Karlos Arguiñano

Ingredients (4 people):

  • 300 g flour
  • 3 eggs
  • 600 g mushrooms (mushrooms)

Clean up mushrooms, chop and add to pan. When spread, add the wine and bring to a boil. Pour the tomato sauce and mix well. Add a little chopped parsley and stir.

Bring to a boil lots of water in a large saucepan, season it and cook noodles for 2 minutes. Squeeze them.

Serve noodles in a fountain, grind a little pepper on top and pour sauce. Sprinkle with grated yellow cheese and spread on 4 plates. Garnish with a little parsley leaves.


If the dough is sticky, you can add a little more flour to it until you get the right consistency.
