Karlos Arguiñano presents a simple dish of fried blood sausage with slices of tomato and eggs placed in the oven.
Ingredients (4 people):
- 4 eggs
- 2 rice puddings
- 1 kg of pear tomatoes
- 3 cloves garlic
- extra virgin olive oil
Preparation of the recipe for eggs with tomatoes and blood sausages:
Bring plenty of water to a boil in a saucepan. Cut a cross-shaped at the bottom of the tomatoes and place them in the pan. Cook them for a few minutes. Allow them to cool. Peel a squash, grate it and slice it.
Peel the garlic cloves, laminate and fry them in a pan with a trickle of oil. Add the tomato slices, season and cook for 10-15 minutes.
Cut the blood sausage into slices, mash them into flour and fry them in a pan with a trickle of butter.
Place the pieces of sausage between the tomato slices. Crack the eggs on top and place the pan in the oven until the eggs are firm. Season the eggs and sprinkle with a little chopped parsley. Serve.
