Carlos Arginiano prepares a baked recipe from eggs, bacon and zizi or San Jorge mushrooms.

Ingredients (4 people):

  • 8 eggs
  • 12 slices of smoked bacon
  • 400 g zizi (mushrooms from St. George)
  • 2 cloves garlic
  • extra virgin olive oil
  • Sol
  • parsley

Preparation of the recipe for eggs and zizi:

Heat a pan with a drop of butter, add the slices of bacon and cook briefly on both sides. Take them out and book them.

Clean the zizas and chop them by hand (it is important to chop them by hand). Peel the garlic cloves, chop them and stew them in a pan with oil. Add the zizas and simmer briefly. Season.

Prepare 4 separate oven-safe containers. Place three strips of bacon around the perimeter of the containers and distribute the zizas. Sprinkle with a little chopped parsley. Add two egg whites to each container (reserve the yolks) and season.

Place the dishes in the oven and bake at 200 ° C until the egg whites are firm.

Remove the containers from the oven and place 2 egg yolks in each. Season them and garnish with a little parsley leaves. Serve.


If you don’t feel like eating the yolks raw when you add them to the containers, you can bake them again for a few minutes.
