Eva Arginiano’s dessert: apple cake and dried fruits: walnuts, hazelnuts and raisins.
Ingredients for the recipe for cake with apples and dried fruits:
- – For 6-8 people:
- 2 apples (Granny Smith)
- 100 g raisins
- 100 g chopped walnuts
- 100 g chopped hazelnuts
- 3 eggs
- 2 cups wholemeal flour
- 250g sugar
- 200 ml of olive oil
- 250 ml of milk
- 1 teaspoon yeast
- 1 vanilla bean
- lemon peel
- butter and flour (to spread the form)
- gooseberries, blueberries and mint (for garnish)
Preparation of the recipe for cake with apples and dried fruits:
Mix all the wheat flour with the yeast in a bowl. Add the raisins, walnuts and hazelnuts. Stir. Peel and dice an apple and add it. Mix and save.
Place the lemon zest in another bowl. Open the vanilla in the middle and lengthwise and add the seeds. Add the eggs and sugar and mix with a mixer. Add the butter little by little without stopping to beat. When assembled pour in the milk and continue to beat until all the ingredients are well integrated. Add this cream to the previous mixture.
Coat the mold with butter and flour (so that the cake does not stick when baking) and add the mixture of apples and nuts. Peel and cut the other apple in half, place them on top of the mixture and bake at 170 ° C for 45 minutes.. Unmold.
Serve the cake with apples and dried fruits and decorate with blackcurrants, blueberries and a sprig of mint.
