Bruno Oteiza’s recipe for a gypsy hand, full of coffee and chocolate cream and decorated with homemade chocolate combs, a cake-based dessert, perfect for birthdays and celebrations.

Ingredients (6-8 people):

  • 3 egg yolks
  • 1 egg
  • 100g sugar
  • 1 liter of milk
  • 85 g corn flour
  • 1 tablespoon decaffeinated instant coffee
  • 3-4 tablespoons cocoa powder
  • 200 g chocolate coating
  • 8 tablespoons syrup
  • chocolate coffee beans for decoration
  • mint leaves
  • About the cake:
  • 6 eggs
  • 100g sugar
  • 260 g flour

Preparation of the recipe for Brazo de gitano from coffee and chocolate:

To do Biscuits, separate the egg whites and yolks. Using a stirrer, assemble the yolks in a double boiler on a saucepan with a little warm water.

In another bowl, place the whites. Add the sugar little by little as you beat.

Mix the yolks with the egg whites with gentle enveloping movements. Add the sifted flour and mix well. Place the mixture in a tube bag and spread the dough on a baking sheet covered with baking paper. Bake at 170ºC for 5-6 minutes.

To do it coffee cream, heat the milk in a saucepan. On the other hand, put the yolks and egg in a bowl. Add sugar, instant coffee, corn flour and a tablespoon of cocoa. Mix well. Pour a little hot milk and continue to stir. Strain the mixture on a saucepan with milk and bring to a boil. Then reduce the heat and cook for 10 minutes, stirring constantly. Transfer to a bowl and allow to cool. Put it in a pastry bag.

He drank the cake with the syrup. Cover it with coffee and chocolate cream and roll. Wrap it in parchment paper and leave it in the fridge for about 1 hour.

For chocolate combs, melt the chocolate coating in a bowl in a double boiler. Make a turbine out of greaseproof paper. Fill it with chocolate, make a small incision on top and make comb-shaped figures on a plate covered with greaseproof paper. Allow them to cool.

Sprinkle the gypsy hand with cocoa and serve on a long plate. Garnish with coffee and chocolate cream, some chocolate coffee beans and mint leaves. Finally, place the chocolate cakes. Serve the gypsy hand with coffee and chocolate.
