Ingredients (4 people):

- 1 natural yogurt
- 100 g flour
- 10 g baking powder

- 100 g of peach in syrup
- 1 apple
- extra virgin olive oil

- mint leaves
Preparation of the recipe for sponge cakes and pistachios:
Assemble the eggs and add the sugar. Add a tablespoon of oil and yogurt and continue to beat. Add the peeled and chopped apple. Add the peeled and chopped pistachios and mix well. Add the sifted flour and yeast and stir.
Cover the bottom and edges of the forms with greaseproof paper and pour the dough (without filling everything together). Bake at 200 ° C for 10-15 minutes. Let it harden.
Put the peach syrup in the blender cup and beat with an electric mixer.
Serve the cakes and garnish with the jam and the peach and syrup mixture. Spread the cake with the jam to give it shine and serve. Garnish with mint.
