Carlos Arguiñano prepares the recipe with a German touch for beer with mashed potatoes and sauerkraut in his TV show Cocina Abierta.
Ingredients (4 people):
- 2 pork knuckles
- 1 onion
- 1 carrot
- 1 clove
- 3 potatoes
- 200 ml of beer
- 2 tablespoons honey
- extra virgin olive oil
- For sauerkraut:
- ½ cabbage
- 400 ml of water
- 200 ml of vinegar
- ½ tablespoon of salt
- 2 tablespoons sugar
- 20 grains of black pepper
Preparation of the recipe Beer shank with mashed potatoes and sauerkraut:
Put it down knuckles in the pot, cover with water and season. Peel carrots and onions, cut them into large pieces and add them. Add the cloves. Close saucepan and cook for 45 minutes as soon as the valve rises.
Remove, drain well and place in safe oven container. Mix beer with honey and pour the mixture over knuckles. Enter them in oven and bake at 190 ° C for 1 hour, turning them from time to time.
Place to heat in a small casserole, vinegar, water, sugar, salt and Peppercorns. Let everything dissolve well. Save the marinade.
Chop finely chewed cabbage. Heat one large casserole with water and a pinch of salt. When it started bring to a boil, add the cabbage and cook for 5 minutes.
Remove and drain well. Put the cabbage, (press it well and drain it again) in a large glass jar. Pour vinegar, water, salt, sugar and pepper mixture. Close it and leave it stay 24 hours at least in a dark place.
Put it down potatoes in a casserole, cover them with water and cook for 35 minutes approximately. Peel at the time of serving potatoes, chop and pass them through the food processor in a bowl. Season with salt and pepper, add a little chopped parsley and a good rain of olive oil. Mix well.
Cut knuckles of 2 pieces. Serve a piece of knuckle on each plate and season it. Add to each one portion of mashed potatoes and one of cabbage. Garnish with a little parsley leaves.
It is important that the knuckles are very dry. If necessary, you can dry them with absorbent kitchen paper.
