Recipe for baked mushrooms, egg yolk and pastries

Bruno Oteiza’s recipe for baked mushrooms, accompanied by egg yolk and lamb cakes, a simple dish to prepare.

Ingredients (2 people):

  • 4 mushrooms
  • 2 egg yolks
  • 150 g of lamb
  • 1 clove garlic
  • 2 tablespoons breadcrumbs
  • 1 button oil
  • extra virgin olive oil

  • parsley

Preparation of the recipe for baked mushrooms, yolks and cakes:

Clean up mushrooms scraping the stem with a knife and rubbing the cap with a piece of paper moistened with water. Cut the mushrooms in half lengthwise and place them on a baking sheet greased with a drizzle of oil. Salt pepper.

Chop the garlic clove and place it on a plate. Add the breadcrumbs, a tablespoon of chopped parsley and mix well. Sprinkle some of the mixture on the mushrooms (reserve mixture for the meat). Spread half of the oil – to the point of ointment -, water with a trickle of oil and bake at 180 ° C (pre-hot) for 15 minutes.

Forge egg yolks, sprinkle with a little red pepper and put them in oven so as to warm up. Remove and season with a trickle of oil.

Forge sweet bread and put them on saute in a pan with a trickle of butter, the remaining oil and a little of the garlic mixture, breadcrumbs and parsley.

Serve one egg yolk per person and add the mushrooms and lamb. Sprinkle with chopped parsley and garnish with a few sprigs of parsley and onion sticks.
