Bruno Oteiza presents a sponge cake based on sponge cake, filled with strawberries in syrup, covered with dark chocolate ganache and decorated with nuts. Perfect for birthdays and celebrations.
Ingredients (8 people):
- 8 eggs
- 200 g dark chocolate
- 300 g. Dark chocolate tablecloth
- 200 g of berries
- 200 g Flour
- 150 g Butter
- 100 grams of sugar
- 50 g Almonds
- 50 g pistachios
- 50 g Walnuts
- Flour and butter for the form
- 1 spray of rum
- Salt crystals

Preparation of the recipe for 100% chocolate cake:
For him Biscuits, put the chocolate in a bowl and melt it in baini-marie. Meanwhile, beat the eggs with an electric mixer (or with a whisk if you do not have an electric mixer). Add 50 grams of sugar and continue to assemble.
Add the sifted flour and mix with gentle wrapping movements. Add the chocolate and continue to stir. Transfer the dough to a form covered with butter and flour. Bake at 190 ° C for 20-25 minutes.
For the syrup, put 50 grams of sugar in a pan with a splash of water. When it takes consistency, add the chopped strawberries, a few salt crystals and a pinch of pepper. Let them cook for 2 minutes.
For him ganash (coating) Melt the chocolate glaze in a saucepan. Add the butter, also melted. Mix well.
Remove the cake from the oven, turn it over on a plate and open it halfway. Put a thin layer of strawberries in the syrup in the center.
Add a nice spray of rum to the syrup soak both parts of the cake well (the surface that is covered with strawberries and the lid).
Join the two parts of the cake. Cover with ganasha and let it fall from the edges (spread it with a spatula all over the cake). Garnish the edges with almonds, pistachios and walnuts and let them cool for about 1 hour.
During serving, heat some chocolate on the surface using a lantern. Garnish with mint, strawberries and dried fruits.
