On this occasion, chef Carlos Arguiñano surprises us with delicious and juicy, whose main ingredient is rabbit meat: rabbit thighs with black beer, a tasty, quick and easy to prepare dish in which healthy and exquisite rabbit meat will be accompanied by various spices (cumin, bay leaf, rosemary, thyme) and the great taste of black beer.
Ingredients (4 people):
- 4 rabbit thighs
- 330 ml of black beer
- 50 ml of sherry vinegar
- 2 apples
- refined corn porridge
- extra virgin olive oil
- 1 teaspoon ground cumin
- 2 nails
- 15-20 grains of black pepper
- 1 bay leaf
- 1 clone of rosemary
- 1 sprig of thyme
Preparation of the recipe Rabbit thighs with black beer by Carlos Arguiñano:
Forge rabbit thighs and place them in a oven safe dish. Pour vinegar and beer. Add cumin, cloves, black peppercorns, bay leaf, rosemary branch and thyme. Cover it with kitchen foil and leave it to marinate in the refrigerator for 12 hours.
Remove rabbit thighs, dry them well and turn them red lunch box (wide and low casserole) with a trickle of oil.
Add marinade liquid to lunch box and point it to low-medium heat for 30-35 minutes approximately (if you notice that it dries during cooking, add a little water). Take it out rabbit thighs, strain the broth, put everything (sauce and thighs) back in lunch box and put it to heat. Dilute refined corn porridge in cold water and add a little to sauce. Remove casserole and bring to a boil until it thickens slightly.
Peel apples, their core, cut them into wedges and stew them in a pan by spraying oil.
Serve on each plate a rabbit thigh, season it and accompany it with a little apple wedges. Decorate the plates with a few parsley leaves.
Rabbit is one of the meats with the lowest saturated fat content and is a good choice for people with cardiovascular problems. This is lean meat, easy to chew and grind.
