Last year we started making our first panels: pistachios, almonds, pine nuts and more.

Well, this year we were surprised by recipe for panels what we saw on the web pasteleria.com, “Quicos Panellet“.

And of course, the challenge was set … Now we present the result of our recipe for “Quicos panels“.

  • 200 g Almonds land
  • 60 Jr. Water mineral
  • 140 g White sugar
  • 100 g corn toasted or cold
  • 1 Egg

Instructions

  1. Pour the water with the sugar into the pot.

  2. When it starts to boil, add the ground almonds at once and stir with a few sticks until the dough falls off the walls of the pan, 3 to 5 minutes.

  3. Remove from the heat and allow to warm.

  4. Add the egg whites, preserving the yolk, and stir until it integrates perfectly into the dough.

  5. Cover the pot with plastic wrap and refrigerate for a few hours.

  6. We take out the dough and start to form the panels. I advise you to make them quite small, as later in the oven they tend to grow.

  7. Crush the coconut or fried corn in a mortar or in a Thermomix and cover the panels in it.

  8. Carefully place the coconut panels on brown paper on the oven tray.

  9. Spread them with the beaten yolk, to which we will add a few drops of water, and add a pinch of toasted corn on top.

  10. Bake in an oven preheated to 200º, 6 minutes, on top. Not one more, because if not, they will stay very dry inside.

  11. Remove and allow the coconut panels to cool to room temperature.

  12. We tried Quicos Panellets without craving!
