The other day we talked to you about green peas … we prepared this exquisite pea quiche and salami al tartufo with them.

Green peas are a delicacy that we can find fresh, at a reasonable price, in vegetables. With them, after the shell of the pod, we have prepared this recipe: “quiche with peas with Salami al-Tartufo.

Salami al TartufoIt is a sausage similar to our sausage, which in addition to pork has black truffles among its ingredients.

Preparation of shortcrust pastry:

  1. Put the flour in a bowl. We make a kind of crater and add the butter in pieces, salt and water.

  2. Knead until a compact and homogeneous dough is obtained.

  3. Cover the bowl with plastic wrap and store in the refrigerator for one hour.

Preparation of quiche with peas and salami al tartufo:

  1. Remove the broken dough from the refrigerator.

  2. We stretch and put in the form where we will prepare our quiche.

  3. Bake, with the oven preheated to 180º, for 15 minutes.

  4. Meanwhile, stew the peas with the finely chopped onion in a pan with a pinch of olive oil. Add diced sausage, stir and remove from heat.

  5. Beat the eggs with the cream in a bowl.

  6. Add the sauce to the bowl.

  7. Stir and pour over the broken dough.

  8. Bake for 25 minutes at 170º.

  9. We take out and try the hot, hot or cold pea quiche.
