We virtually constantly have further pumpkin sitting all around this time of 12 months, both puréed and in cans, or contemporary. Two of my favored sweet fast breads are pumpkin bread and gingerbread.
This recipe began as an experiment to mix the two. The end result? A tender, richly flavored loaf—spicy, molasses-y, and pumpkin-y.
