We have prepared the recipe for the cake with potatoes and zucchini with vegetables from our closet. Good and easy to prepare salty cake, which everyone likes equally.

Time to prepare 150 minutes


  1. We put the puff pastry in a shape, in our case round and 22 cm, with the paper that keeps it.
  2. Cover the inside with legumes (chickpeas or beans) and place it in the center of the oven, preheated to 180º, for 10 minutes.

  3. While blanching the potatoes and zucchini, separately, 5 minutes in boiling salted water. Remove the colander, cool with cold water and save.
  4. In a frying pan with olive oil, spread the clean onion and cut into thin strips (julienne). When we see that it becomes transparent, add the red pepper, clean and cut into strips.

  5. Let it cook on low heat for 5 minutes. Remove to a well-drained bowl.

  6. Mix the potatoes, zucchini and sauce in a bowl, all well drained.

  7. Remove the puff pastry from the oven, remove the legumes from the inside and fill with the previous mixture.

  8. In a bowl, beat the eggs, cream, salt to taste and a pinch of pepper.

  9. Carefully pour the vegetables, place the halved cherry tomatoes on top and sprinkle with some grated yellow cheese. Introduce again in the middle of the oven, 60 minutes at 180º.

  10. When the time is up, stab with a knife and if you see that it comes out clean, turn off the oven and let the potato and zucchini cake warm up inside.

  11. If it comes out dirty, leave for another five minutes.

  12. When warm, cut into portions and serve.

The cake with potatoes and zucchini It can be served with a little salad, although it doesn’t really need a side dish, as it is really tasty in itself.
