How to make pork in secret with plum sauce. With this homemade and traditional stew you will increase your daily recipe book with a delicious new dish. Meat is interchangeable for fillet or pork, but the secret has something special. It has a slightly different taste and texture than the fillet. Let’s say it’s somewhere between the waist and the bridle. I personally love it and that’s why I couldn’t resist using it in this dish.

1 – We seal the meat

We will start by removing the fat that the piece of pork secret may have with a knife and then cut it into cubes about 2 cm thick. Then we will put a pan on the fire with olive oil covering the bottom and we will put the peeled and whole garlic inside. As soon as they start to turn brown, we will do the same with the secret meat and stew it to seal it.

When the meat is sealed, we will add the white wine and now we will cook the meat on medium heat for about 30 minutes. If you see that it is getting too dry, add some more water.

3 – On the side we cook the sauce

While the meat is cooking, in another pan we will prepare onions, cut into julienne and carrots into pieces, along with a little salt and olive oil. In which both things are done, we will add the fried tomato and after we mix it and pour a few ladles or three of the broth from cooking the meat, we will let it cook slowly for 5-10 minutes.

4 – Crush the sauce and add it to the meat

When we have the sauce ready, we will pour everything into a measuring cup and crush it with the blender. Then we will put the already crushed sauce in the pan or casserole in which we cook the meat and mix it well.

5 – We finish our delicious stew

Then we will cut the plums into smaller pieces and add them to the stew, mixing them with the rest of the sauce and they are well distributed. Now we will cook everything together slowly for about 25 minutes, adding water if necessary so that the stew does not dry out too much. When we’re done, we’ll quickly bring it to the table to eat before it cools down.
