This technique consists in covering the piece of meat with a special salt for this type of cooking, in which the meat does not lose juices and takes exactly the salt it needs, even though it is covered with it.
Ingredients for 6 people
1 – Garlic confit
We start by slicing the garlic and placing olive oil covering the bottom of a casserole or pan. When hot, add the garlic and cook slowly.
2 – Prepare the fillet
When the garlic starts to turn brown, add the diced pork fillet and season. We move it so that it is sealed on all its faces.
3 – Add the peppers
While the fillet is cooking, cut the pepper into strips or pieces to your liking. When the fillet is sealed, add the pepper, season a little and cook slowly.
4 – Add the tomatoes
After preparing the pepper, add the fried tomato and cook it a bit.
5 – Add the mushrooms
Now we have to clean and chop the mushrooms to our liking. When the tomatoes are cooked, add the mushrooms and stir. Here we can add a little chopped hot red pepper to give it a spicy touch, although this is not necessary.
6 – Add water and cook
Put a little water, put the lid on and cook for about 10 minutes.
7 – Remove the casserole from the heat
Then we remove the casserole from the heat and we can sit down to eat this pork fillet with mushrooms and peppers.
