How to make beans with artichokes. This is one of those recipes that can add a lot of flavor to a weight loss diet. And I say it’s a diet recipe because everything it contains is vegetables (including beans), water, salt and a little olive oil. Its preparation is very simple, as long as we use canned or frozen artichokes. In case you want to prepare them from scratch, I published in Family Kitchen, two articles about how to peel the perfect artichoke and how to cook artichokes to the point. If you cook them fresh, you need to control the cooking point well and take into account the time in which they will cook with the beans. There you have to decide how much you want to cook them first and when you want to put them in the bean casserole.
Ingredients for 4 people
1 – Boil the beans
We will start by placing a large pot on the fire with about 3 liters of bottled water. I use bottled water because it allows me to better control readiness and is more stable. Running water can be more or less hard, which can affect the cooking time of the beans. When it boils, we will add a handful of salt and add beans. We will let them cook with the half-covered casserole.
2 – We start the sofrito
When about 20 minutes have passed, we will start making the vegetable sauce. We will cut onions and garlic and fry them in a pan with olive oil covering the bottom and a little salt.
3 – Add ingredients to the sauce
While they are cooking, we will peel and slice the carrot, which we will add to the pan just when we have finished slicing it. When the onion becomes translucent, add the chopped green pepper and let all the vegetables cook slowly.
4 – Put the artichoke in the pot of beans
When we are half done with the green pepper, we will add the artichokes if they are frozen. If they are canned, we will wait a few more minutes and put them well drained. In case they are fresh, as I said in the presentation, you will have to put them when you think they are suitable, depending on what they have done.
5 – Grate the vegetables from the sauce
Once the vegetables are ready, we will add the fried tomatoes and cook everything together for 1-2 minutes. After this time we will pour 4-5 scoops of broth from cooking beans (one of them with a little bean). Then we will grind everything with the mixer in the same pan (if it is deep, otherwise you will have to pour all this into a measuring cup).
6 – Add the sauce to the beans and mix well
When we have crushed the sauce, we will pour it into the casserole of beans and artichokes. Then stir slowly to mix the sauce with the broth and let it cook for another 10-15 minutes.
7 – Allow the beans to cook with the remaining ingredients
After this time we will check the salt level and based on that we will add salt or not. We will turn off the stove, cover the casserole and let the stew rest for another 10 minutes before eating it.
8 – We serve and enjoy
