Instructions
The first thing we will do is pine oil. To do this, blanch the pine needles for a few seconds in boiling water. Remove and dry.
We put them in a bowl together with the oil. Mix with a blender or in a Thermomix.
Cover with plastic wrap and let it rest for an hour in the refrigerator.
Remove, strain through a Chinese dish, pour into a bowl, cover with plastic wrap and store back in the refrigerator. We let him rest overnight.
The next day we put an egg in the bowl in which we have the pine oil.
Beat with a mixer until you get mayonnaise.
Season to taste, mix again with a fork and we will get our pine mayonnaise, which we will use to accompany any kind of white fish, grilled meat or vegetables.
