  1. The first thing we will do to start the Philadelphia cheesecake recipe will be to prepare the base of the cheesecake, so we will crush the cookies in a bowl, either with Thermomix or another similar kitchen utensil.

  2. Unbutton the butter in the microwave and mix it with the cookie crumbs.

  3. Once we have a homogeneous paste, we spread it on the base of a mobile form.

  4. Keep the form in the refrigerator for at least half an hour so that it cools and compacts the previous mixture.

  5. When we see that the biscuit with the butter has become “hard”, we break the cheese with the milk, cream and sugar in a casserole or a large saucepan.

  6. Put the fire and when it cooks, add the contents of 2 bags of cottage cheese

  7. Remove from the heat and stir with a few sticks.

  8. We return to the fire and leave for a minute, never boiling.

  9. Remove again and, without stopping to mix with the sticks, wait for the mixture to harden.

  10. Pour very carefully on a spoon, little by little, on the form.

  11. Allow it to cool to room temperature and store in the refrigerator until use, at least an hour and a half. Although I personally like it more than one day to the next.

  12. Before serving, cover with strawberry jam, spread on a plate and try this simple Philadelphia cheesecake.
