1 – We prepare the meat filling

Once we have made the filling, we will pour it into a spring to cool a bit.

2 – Fill the peppers

Once the stuffing has cooled, we will fill the peppers almost to the brim, leveling the top.

3 – Dough and fry the peppers

The next step is to prepare two bowls, one with flour and the other with a beaten egg, and pass the peppers first in flour and then with an egg. While we cover them, we will fry them in a pan with hot oil.

As the dough turns red, we will remove the stuffed peppers in a plate with absorbent paper to remove excess fat.

5 – We make sofrito sauce

With fried peppers, it’s time to make the sauce. In the casserole in which we will make the stew (it should be large enough to fit all the peppers in the same plane), we will put olive oil covering the bottom and in which it is hot, we will add onions and garlic, all cut into finely, along with a little salt. When they start to brown, add half a tablespoon of flour and stir quickly to obtain an emulsion with butter.

6 – Finish cooking the sauce

At this point we will pour approximately half a liter of water and mix it with the other components. Then we will add the fried tomatoes and pepper pulp, stirring again to integrate them with the water and the rest.

7 – Boil the peppers in the sauce

Now we will put the peppers at the bottom of the casserole. We will not put one on top of the other so that everyone cooks equally. From now on we will cook the peppers for 20-25 minutes on medium heat. Eventually, the sauce will support a little when reduced, and this will happen when we remove the casserole from the heat and let the stuffed peppers rest for another 5-10 minutes.
