The current owner and director of Pago de Espejo, Rosario Espejo, has the fourth generation in their daughters and they themselves have developed the most commercial and aesthetic feel for this exquisite extra virgin olive oil.

The Villanueva de la Reina mansion in Jaen has more than 200 hectares of centuries-old olive trees. Among its entire harvest and for the development of this oil, the fruits are chosen with great care, and are currently 10% of what is intended for packaging.
