Joseba Arguiñano prepares two colorful flat tortillas. One with cherry tomatoes and arugula, and another with zucchini, cheese, pine nuts and arugula. A fun way to make tortillas with the ingredients you have at home. Great and easy to implement!

Omelet with tomato and arugula:

Ingredients (1 tortilla):

  • 2 eggs
  • 4 cherry tomatoes (2 yellow and 2 red)
  • 2 tomatoes, dried in oil
  • wild onion
  • extra virgin olive oil
  • arugula leaves
  • Sol

Preparation of the recipe for omelet with tomato and arugula:

Cut the dehydrated tomatoes into cubes in oil, finely chop the onion and cut the cherry tomatoes in half.

Beat the eggs and season them.

Heat a frying pan with a teaspoon of olive oil, pour the beaten eggs and wait for them to harden a bit. Add the tomatoes (in oil and cherries) and a little chopped onion.

Slide the tortilla onto a large plate and moment to serve (it’s not very hot), sprinkle with arugula leaves.

Omelet with zucchini, cheese, pine nuts and arugula:

Ingredients (1 tortilla):

  • 2 eggs
  • 1 piece zucchini
  • 1 piece of cheese
  • baby spinach leaves
  • toasted pine nuts
  • extra virgin olive oil
  • Sol

Preparation of the recipe for a tortilla with zucchini, cheese, pine nuts and arugula:

Cut the cheese and diced zucchini.

Beat the eggs and season them.

Heat a frying pan with a teaspoon of olive oil. Pour the eggs and wait for them to harden a bit.

Distribute above pine nuts, diced cheese and zucchini.

Slide the tortilla onto a large plate and during serving (that the tortilla is not very hot), add baby spinach leaves.
