Today’s recipe comes from Italy, a country where it is prepared differently depending on where you are and the time of year, as it is made with seasonal vegetables. If you haven’t guessed yet, this is the famous thing minestrone soup It contains not only vegetables but also vegetables, delicious chicken broth and pasta snails. From all this you can understand that this is a very strong and tasty dish, although somewhat time consuming. This shouldn’t stop you from cooking it one day when you want to eat something different from what you usually do. I certainly encourage you to do so.

We start by frying onions, garlic, carrots and celery, all very finely chopped, in a large saucepan with olive oil covering the bottom and a little salt.

When the vegetables are ready, we will add the tomatoes, previously passed through a grater, and cook it for a few minutes.

At this point we will add the jars of beans and chickpeas (in my case the latter also had spinach). Stir a little, pour enough water so that the legumes float, add the spices and let it cook for about 10 minutes all together.

    Minestrone Soup Step 3

After this time we will put the chicken broth through a strainer (in case you prepare the homemade broth). We will then add the green beans, pre-cleaned and chopped, and count for 10 minutes from the moment the broth starts to boil.

    Minestrone Soup Step 4

It will be at the moment when we put the drained peas and pasta, which will take another 10 minutes for cooking.

    Minestrone Soup Step 5

In the process, we will cut a few fresh parsley leaves and add them to the casserole. When the pasta is cooked, turn off the heat, cover the casserole and let the minestrone soup rest for another 10 minutes.
